Pavte (also known as Val, Val Papdi, or Indian Field Beans) are nutritious, green, flat beans widely used in Maharashtrian and Gujarati cuisine. They have a mild, nutty, buttery flavor and are famously used in spiced, coconut-based curries known as Usal or Rassa, often paired with potatoes, rice, or roti.
